Basic Knife Skills with Chef Claude
An introductory session during which you’ll learn how to grip the knife properly. Learning how to hold and use a knife correctly will not only help you work more safely, but will also enable you to work faster, making you much more efficient in the kitchen. If safety and speed aren't enough incentives, good knife skills also allow you to cut your food uniformly.Some techniques to be covered:
- How to cut properly
- How to dice
- How to mince
- How to chiffonade
- How to julienne

Our Instructor is Chef Claude Lewis!
A native of Jersey City and Food Networks Chopped Champion, Chef Claude Lewis is also the owner, operator, and head chef of Freetown Road Restaurant in Jersey City. A representation of West Indian culture, and Caribbean flavors, Chef Claude's menu at Freetown Road incorporates modern techniques that he has acquired throughout his 15+ years of culinary experience.
